The physicochemical characteristics of strawberries are influenced by a number of factors, including genetic
makeup and the production system employed. The objective of this study was to quantify the
physicochemical variables and antioxidant activity of 12 strawberry genotypes produced in a recirculating
semi-hydroponic system. The total soluble solids (TSS), total titratable acidity (TTA), TSS/TTA ratio, pH,
vitamin C, anthocyanins, flavonoids, phenols (total phenolic compounds—TPC), and total antioxidant
activity (TAA) were evaluated in the pseudofruits of each genotype. The results demonstrated that the
strawberries of the Jonica genotype exhibited a higher TSS/TTA ratio (33.21), indicating a superior
gustatory quality, which can be attributed to the elevated TSS values (7.97º Brix). The RVFS06CR105 genotype exhibited the highest anthocyanin content, with a concentration of 16.63 mg 100 g⁻¹ of FM (fresh
mass), while the "San Andreas" genotype demonstrated the lowest anthocyanin content, with a concentration
of 7.94 mg 100 g⁻¹ of MF. With regard to flavonoid content, the highest values were observed in the
Camarosa (11.06 mg 100 g-1 FM) and Camiño Real (9.25 mg 100 g-1 MF) genotypes, while the lowest was
observed in the "RVFS07M05" genotype (7. The lowest flavonoid content was observed in the
"RVFS07M05" genotype (7.00 mg 100 g-1 FM), followed by Ceres (7.31 mg 100 g-1 FM), Pircinque (7.94
mg 100 g-1 FM), and San Andreas (7.99 mg 100 g-1 FM). The genotypes RVFS06CR105 (185.66 mg EAG g1 FM), Camarosa (176.32 mg EAG g-1 FM), and Monterey (168.07 mg EAG g-1 FM) exhibited the highest
levels of this parameter. The genotypes San Andreas (164.15 mg EAG g-1 FM) and Gaia (154.74 mg EAG g1 FM) exhibited the highest CFT contents, in comparison to the other genotypes. The vitamin C and AAT
content did not differ significantly between the genotypes, with average values of 106.12 mg 100 g-1 MF and
91.81%, respectively. The genotypes Jonica, Pircinque, Gaia, and RVS06CR105 exhibited the highest
SS/AT balance. Gaia and RVS06CR105 are experimental hybrids with nutraceutical and fruit color
characteristics that warrant their commercialization.
