Abstract

Open-air markets are essential for Brazil’s food supply, especially for the sale of fresh products. However,
hygienic conditions are often unavoidable, which increases the risk of food contamination. Some factors such
as incorrect handling and food storage can aggravate this risk. Therefore, improving these practices is essential
to guarantee product quality and waste reduction, in addition to minimizing financial losses. The objective of
the present study was to evaluate Good Handling Practices in the stalls of open-air markets in Paraíso do
Tocantins, in the state of Tocantins, verifying the hygiene of the place and the fruit and vegetables. The results
obtained revealed that the fair has good handling practices, but also hygiene and waste control failures that
compromise food safety. Correcting these flaws, in accordance with RDC 216/2004, will improve the quality
of family farming products, reduce waste, and minimize financial and environmental losses.
